So for anyone following along, I bought a replacement and the firmware differences between the old S1 and the new one are significant. New one has graphs and different screen layouts and that also explains the different numbering of the menu items (this new one has more options it seems).
But the biggest best news is this new one is detected in Home Assistant by MULTIPLE Tuya HACS integrations. That was going to be my goal using VSCode and Copilot to get this working; as my old one was detected as a device on my Tuya Smartlife integration, but had zero entities to use. Much to my surprise, this one not only shows up, but has > 40 entities (literally everything)!!
I started with this one, as I thought this is what I would use to start and get this socket working in; turns out it automatically found it and works perfectly!

Then I noticed even the standard Tuya that comes with HA showed this Atorch socket!

And last but not least this one does too

So it's possible you ONLY need the default Tuya integration and not the other two, or maybe the other ones enable it and so the stock one then shows it too. Unknown and I don't feel like figuring that out as it works and now I can make automations like "if the temperature > 80 then turn on a smart plug that has a dumb fan" that sits behind my server to cool it off...
